Ingredients
- one 15 oz can of black beans, drained and rinsed
- 2 plum tomatoes, chopped
- 1 yellow onion, diced
- 1 tablespoon of olive oil
- Roni’s taco seasoning (I use 1/2 the amount of everything in this recipe)
- 1 avocado
- your favorite taco shells
- salsa, cheese, and sour cream
- Optional: quinoa
Heat the oil in a large skillet. Add the onion and taco seasoning. Cook until onions are soft. Add the beans and cook for 2 minutes. Add the tomatoes and cook for 2 minutes. Meanwhile heat your taco shells according to the package directions. Layer the black bean mixture, avocado, salsa, cheese, and sour cream on your taco shell. (2/3 of a cup of the bean mixture, 1 tablespoon of salsa, 2 teaspoons of low fat sour cream, and 1/8 of the avocado is 3 WW points. Make sure you add in the points for your taco shell!)
