New Recipe for Veggie Chili

Today I made a delicious vegetarian chili combining two of recipes from my favorite health gurus, Roni and Sophie

Veggie Chili

(Please excuse the ugly plastic container! I forgot to take a picture of the food on my plate.)

Recipe for Veggie Chili (3 points per serving; Serves 6)

  • Saute 1 yellow onion, 2 cloves of garlic, 1 diced zucchini, and a handful of chopped baby carrots in 1 tablespoon of oil for about 5 minutes. 
  • Stir in Roni’s taco seasoning and 1/4 teaspoon of cinnamon. 
  • Add 2 cans of kidney beans, 1 can of pinto beans, 1 can of diced tomatoes, 3 cups of vegetable stock, and 2 tablespoons of tomato paste. 
  • Simmer for 15 minutes.


This recipe is great for a cool rainy day, and we have been having a lot of the recently here in NJ!
